The Pioneer Woman's White Chicken Enchiladas

I have made a couple of different recipes for enchiladas lately and haven't been wowed by one yet. Yesterday, I found this recipe on The Pioneer Woman's website, which by the way has tons of good recipes. I really like her website because she goes step by step with pictures on what you are supposed to do. As someone with not a lot of experience, I find this very helpful. This is the first thing I have made from her and it was really good. I will tell you it is not an easy throw together meal, but if you have some time it is definately well worth the time it takes to put together.

The recipe calls for a whole chicken cut up, so after work, I went to Tom Thumb, who had no chickens cut up. Luckily, I convinced the nice butcher man to cut up a prepackaged fryer chicken for me. Don't be grossed out by this. It is worth it because you make a delicious broth that you use in the chicken filling mixture and the sauce. Eric was very excited about the homemade broth. We continued to boil it up after the chicken was cooked and have a supply of homemade broth now. Now at this point, I will admit I did not cook this alone. Eric got home as I was cutting onions and about to die from them and I told him he had to help me. I am glad he agreed because I probably would never been able to get this done in a timely manner all by myself. Even the recipe says it is "intermediate"! I don't think I am at the intermediate level yet! So we worked together and the enchiladas came out perfectly. I would definitely recommend this recipe!
