Easy as Pie Chicken Pot Pie

I have been wanting to make a chicken pot pie for a while now, so when Eric's sister Jessica shared this recipe, I knew I had to try it! It is a super easy recipe that is great for a quick week night dinner.

All you do is mix the following together:

1 lb of chicken breast cooked and shredded (or you could you use a Rotisserie Chicken from the deli)
8 oz. Sour Cream
1 can Cream of Chicken Soup
1 can of Del Monte Veggies (drained) We used the kind with potatoes, corn, peas, carrots, etc.
Salt and Pepper to taste

Put the mixture into a a frozen pie crust and bake at 350 degrees for 30-35 minutes. This version does not have a pie crust on top, but feel free to add one if you wanted!

It was easy and so delicious.
